Mousse


Earlier this year, we discovered raw avocado chocolate torte at the veggie cafe in Truro.
It was a complete revelation to us & since then, I've discovered most of our vegan cookbooks have avocado dessert recipes, weird that I'd never noticed before! Occasionally, we get avocados in our veg box, so this is a delicious way of using them...

Carob & Orange Mousse
Serves 4
2 avocados
6 tablespoons carob
Zest of 1 orange
3 tablespoons of orange juice
8 tablespoons maple syrup
Optional: replace 1 tablespoon of orange juice with orange liqueur 

Whizz up the ingredients together until a thick & glossy mass of mousse.
Refrigerate for a couple of hours & serve.

Unfortunately, we don't own any fancy dessert bowls... 
But it tasted just as good! 

We've had 3 days off work, which is always nice - so this morning we decided to go down to Mevagissey & enjoyed a few hours wandering around...

It was so peaceful!
