Hemmick Beach

Hemmick Beach , a set on Flickr. Hello everyone, We're having quite a busy time & on top of all that our photo space has run out on blogger. Have discovered we can post from here instead, so that's good! We've been having really bad weather in the south west & probably in other parts of the country. The lanes around here are flooded & we insanely ventured out to Sime's gig on Saturday, but amazingly made it back in one piece! We shall try & do another post soon about the weather... But are preparing for a guest to arrive by train (if she makes it). For now, we took these on Friday morning - while we were on the beach collecting driftwood for the woodburner. Sunshine, Lanterns & Lights

How time flies... It's almost a week since we were here... Perranporth Beach... The Watering Hole is the UK's only bar properly on a beach & The Dolphins Fly have played there! Perranporth is on the north coast of Cornwall & 25 miles away from where we live. We had dropped Hugo off at the home ed group & fancied spending the day enjoying the sun. When I heard that Perranporth beach is 3 miles long... I thought we should check it out! We had the most perfect time & the beach is amazing... Though we both agreed that neither of us would like it when it gets busy! Then it was on to Truro... This cafe has changed name so often that I can't remember it's name now... It used to be veggie & now sells meat & fish! :( But they did make a very nice vegan sweet potato, pumpkin & coconut soup. Mevagissey Harbour

Monday's weather was really dull, but we fancied getting out in the fresh air. Last week, we saw a grey seal just outside the harbour, but the photos & video didn't come out very well. We thought we may see him again, but he was nowhere to be seen... We love this time of year - when we get places to ourselves... Yesterday, we had a full day out in the sunshine... On Perranporth Beach... And ended the day at Truro's City Of Lights... Lantern Parade & switch on of the Christmas lights. More to follow soon... Bye for now, Kay & Sime xx

Give, Appreciate, Participate

   Today is World Kindness Day...  We read about it in  a newspaper & decided to check it out! How lovely to think that no-one need wait a moment. We can start now, start slowly, changing the world. How lovely that everyone, great and small, can make a contribution toward introducing justice straight away. And you can always, always give something, even if it is only kindness! Mousse

Earlier this year, we discovered raw avocado chocolate torte at the veggie cafe in Truro. It was a complete revelation to us & since then, I've discovered most of our vegan cookbooks have avocado dessert recipes, weird that I'd never noticed before! Occasionally, we get avocados in our veg box, so this is a delicious way of using them... Carob & Orange Mousse Serves 4 2 avocados 6 tablespoons carob Zest of 1 orange 3 tablespoons of orange juice 8 tablespoons maple syrup Optional: replace 1 tablespoon of orange juice with orange liqueur  Whizz up the ingredients together until a thick & glossy mass of mousse. Refrigerate for a couple of hours & serve. Unfortunately, we don't own any fancy dessert bowls...  But it tasted just as good!  We've had 3 days off work, which is always nice - so this morning we decided to go down to Mevagissey & enjoyed a few hours wandering around... Spicy Cake & Cookies

More baking... Recipes which don't contain any added fat, but are quite sweet! Sticky Toffee Cake   (Serves 4 -This recipe has been adapted from: Demuths Green World Cookbook) 250ml plant milk 100ml water 250g chopped dates 1 teaspoon bicarbonate of soda 8 tablespoons puréed apple 100g soft brown sugar 200g self-raising whole wheat flour  1/4 teaspoon ground nutmeg 1/2 teaspoon ground cinnamon 1/2 teaspoon ground ginger Method Line 20cm cake tin & preheat oven to 190C Put dates, milk & water into a pan, simmer until the dates are soft. Take off the heat, stir in the bicarbonate of soda & leave to cool. Mix together the puréed apple & sugar, add the date mixture & stir well. Add the spices & gradually add the flour & fold in. Place mixture into the cake tin & bake for around 30 minutes. Test with a fork, which should come out clean when cooked. Toffee Sauce 100g maple syrup 200g soft brown suga
