Simple Burgers

        Because I prefer to make life easy...
 I like to keep my burger (& bhaji) recipes as simple as possible, so the method is pretty much the same every time & it's just the ingredients which change.There are so many different combinations to choose from & it can be a good way of using up leftovers...


Basically, I use the same amount of pulses or nuts to grain, so in this recipe I used 200g cooked chickpeas & 200g breadcrumbs. As well as a large courgette, 2 carrots, 2 red conions & 4 cloves of garlic.
Chop the veg & fry in water for about 10 minutes until soft, I added a teaspoon of cumin & a few drops of soy sauce & a blob of tomato paste.
In a bowl, place the chickpeas, breadcrumbs, a good handful of fresh coriander & juice of half a lemon. Salt & pepper can be added at this point too.
Add the softened vegetables & whizz with a hand blender (add a little hot water if too dry).
Preheat your oven - it's needs to be at it's hottest.
I use non-stick baking trays & dollop the mixture, rather than make them into perfect shapes. I make 6 large burgers from these ingredients, so 6 mounds dolloped on the baking tray.
Place in your hot oven for 10 minutes, then pull them out & turn the tray - but don't touch the burgers!



Bake for another 10 minutes, remove them from the oven & leave to cool for a couple of minutes & serve.
Other cooked grains can be used, nuts, lentils & tofu work well & different herbs & spices. If you worry about them binding you can always use a spoonful of ground linseeds.

For bhajis we use a bag of onions (300 - 400g) & gram flour, as well as lots of spices.

Hi Kath - I'm feeling really well thank you. Doing my own thing with the tablets... The doctor prescribed far too higher doses, so I've got it sorted now & think it's just right! Hahaha - the doctor won't be happy, but I'm fine & that's the main thing!

Sounds interesting. I love vegetables and loads of vegetarian dishes, I just like meat sometimes, too. These days hubby is happy to have a few meat-free days a week, too.

Top Of The World

Lamledra

The sun was shining yesterday again, so after a fairly busy week - we decided to get out for a long walk. We walked into Gorran Haven & took the coastal path back home...

Lamledra House. We used to clean it, but quit after a year - because we only had 3 hours & felt we just couldn't get everything done - it sleeps 20! The owners are lovely though, but their budget is tight with constant maintenance.  They do have some interesting guests there...
It got to 5pm & we still had a long way to go, so we left the path & took the road...
